Biodynamics seeks to support and nurture the entire ecosystem to ensure the maximum possible vitality of the soil, the vines, and the animals and insects that call this place home.

If you treat a visit to Caiarossa like a tour of a conventional estate you will miss out on seeing what makes it unique! To explore Caiarossa, you have to start by opening your eyes wide to take in the vastness of the landscape, the glorious colours of the wildflowers and forests, and then close them to let the natural energies of the area, the aromatic delights of the Macchia Mediterranea, and the charm and deep character of its wines enchant you.
Biodynamic vision
All our vineyard processes follow careful observation of the rhythms of nature, including the lunar cycle and the Biodynamic Calendar, which together help our team to select the perfect time for each activity to produce the very best results. All of these natural supportive relationships work together to ensure the maximum health of all of our plants, provide them with the strongest possible natural self-defence systems, and encourage the fertility and diversity of the whole ecosystem.

Nowhere is this truer than in our kitchen gardens, olive groves and beekeeping.
Caiarossa’s original name refers to an ancient olivegrowing area: Podere Serra all’Olio.
Following this area’s historical production, we have maintained numerous olive groves from which we obtain our extra virgin oil.
Sometimes we also use this amazing oil to produce gentle natural soaps, and, working with a world-class parfumier, we are creating a brand new ambient perfume which captures not just the delicate scent of our olives but notes of the glorious floral tapestry of the Macchia Mediterranea.
Thanks to its unique microclimate, the Tuscan coast is also the perfect region for extraordinary vegetable production.
The organic Caiarossa vegetable garden is part of our wider vision of creating a natural synergy between all the plants, animals, insects and the community around us.
Our garden was started in a joint project with the children of Riparbella, and it now includes aromatic herbs such as sage, rosemary and basil, as well as onions and garlic, aubergines, zucchini and, of course, many fabulous varieties of Italian tomatoes.
The idea is to offer our guests natural products that have been grown according to our philosophy, so we also use these delicious harvests to make our own pasta sauces and ‘giardiniera’ pickles. Perfect to accompany a Tuscan lunch or ‘aperitivo’. But we have not stopped there.
Caiarossa has boosted local pollination by creating 14 beehives with tens of thousands of happy industrious bees throughout our vineyards and olive groves to increase the fertility and production of all of our vines, plants and flowers.
